Ingredients

  • 1 pound boneless, skinless chicken breasts, or  chicken thighs cut into 1.5 inch cubes
  • 4 Stalks Lemongrass, peeled
  • 2 Green onions diced for garnish

Marinade:

  • 1 pound boneless, skinless chicken breasts, or  chicken thighs cut into 1.5 inch cubes
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons honey
  • 2 tablespoons vegetable oil
  • 2 tablespoons minced lemongrass (tender white parts only)
  • 2 tablespoons minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon lime juice
  • 1/4 teaspoon black pepper

Dipping Sauce:

  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • Pinch of chili flakes (optional)

Instructions

  1. In a large bowl, whisk together the soy sauce, fish sauce, honey, vegetable oil, lemongrass, garlic, ginger, lime juice, and black pepper.
  2. Add the chicken to the marinade, making sure each piece is coated.  In a zip lock bag or cover a bowl and marinate in the refrigerator for at least 1 hour or up to overnight.
    Preheat a grill or grill pan over medium-high heat.
  3. Thread the chicken onto the Lemongrass Stalks leaving a little bit of space between each piece.
  4. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and the edges are charred.
  5. Serve the skewers hot, garnished with chopped cilantro and sliced green onions if desired. You can also serve with a side of rice or a salad. Enjoy!

Dipping Sauce:

  1. In a small bowl, whisk together the hoisin sauce, fish sauce, lime juice, water, brown sugar, garlic, and chili flakes (if using) until the sugar is dissolved.
