Plus it’s nourishing with lots of vitamins from all the fresh lemons and blueberries.

My daughter saw these Blueberry Lemonade Bellini’s and asked if we could make these when they were coming over, so I thought with the kids coming too we’d do it up a little different so everyone could enjoy a big batch. So I made the blueberry ice cubes the day before so they would be totally frozen.

Then about an hour before it was time for everyone to arrive I made a simple syrup so it would have time to cool down. I always keep a big jug of ice cold water in the fridge, but you can put some bottled water in the fridge to have nice and cold to fill your gallon dispenser.

I wanted to use all fresh lemons and blueberries, but if you want to take a shortcut and use frozen lemonade concentrate, or Country Time, that would work as well, just add the frozen blueberry slushie to get this pretty color and the health benefits from the amazing blueberries.

It’s kinda funny, years ago we used to have a big pool and friends over every weekend, all we ever did was fill a cooler up with soda and beer, but now we haven’t drank soda in years. We still have a cooler of beer, but it seems everyone wants healthier options for cold drinks.

With this you can still add a little spike with bottles of Prosecco on the side for some extra bubbly, but keep it kid friendly in the jug. That’s what we did this past weekend for our backyard gathering.

Ingredients

For the blueberry ice cubes

  • 2 cups blueberries
  • 2 cups water
  • 3/4 cup sugar
  • zest of 2 lemons

For the lemonade

  • 2 cups sugar
  • 1 cup hot water
  • 2 cups fresh lemon juice (10-12 lemons using a good juicer) or skip simple syrup and use frozen lemonade concentrate
  • 3/4 gallon ice cold water
  • 1 lemon, sliced (we grilled some slices for garnish)

Instructions

For the blueberry ice cubes

  1. Place the berries in a small saucepan, pour in water and sugar. Bring to a boil over medium heat, turn heat down and let simmer 10 minutes. Remove from heat.
  2. Let cool and place in the blender. Pulse until smooth, then strain using a mesh strainer, fill 3 ice trays and freeze 5 hours to overnight.
  3. Add slushie blueberry ice to gallon dispenser with prepared lemonade and garnish with lemon slices

For the lemonade

  1. Simmer 1 cup water and the sugar together to make a simple syrup, let cool. Add the 2 cups fresh squeezed lemon juice and stir together with 3/4 gallon of water in dispenser with lemon slices.
