Kentucky Hot Browns

This classic Kentucky Hot Brown recipe is like a warm hug for your taste buds. Thick slices of toasted bread piled high with juicy roasted turkey, crispy bacon, and tomato smothered in a creamy Mornay sauce so creamy and cheesy, you'll want to lick the plate clean.

Ingredients

For the Sandwich

  • 4 Slices of Texas Toast or Sourdough
  • 2 Tomatoes, sliced
  • 3/4 pound sliced roasted turkey

For the Mornay Sauce

  • 1/4 cup unsalted butter (½ stick)
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 cup shredded Pecorino Romano (about 1½ ounces) or Gruyere
  • Pinch of ground nutmeg
  • 1/2 teaspoon paprika
  • Salt and freshly ground pepper

For Assembling 

  • 8 slices crisp cooked bacon
  • Chopped parsley, for garnish

Instructions

  1. Heat oven to 400 degrees. Line a sheet pan with aluminun foil and spay with with non-stick cooking spray. Place bread slices in one layer on prepared baking sheet. Set aside until ready. Then toast the bread until golden brown about 8-10 minutes.
  2. Melt the butter in a medium saucepan over medium heat. Whisk in flour until mixture thickens to roux. Whisk milk slowly into the roux and cook over medium heat until the sauce begins to simmer and thicken, 2 to 3 minutes
  3. Remove the sauce from the heat and whisk in 1/2 cup Pecorino Romano until the sauce is smooth. Add nutmeg, paprika salt and pepper to taste.
  4. Heat turkey slices in skillet with a little butter and place on toasted bread, pour the Mornay sauce over each, smothering the meat, bread and tomatoes. Cross 2 slices of bacon over each dish. Sprinkle with parsley, and serve immediately.
