This Instant Pot Pork Loin with a Sweet Balsamic Mushroom Sauce is so full of flavor, tender and juicy it’s become one of our family favorites!
I like to add carrots and onions as well, but you don’t have to. We wanted mashed potatoes so I didn’t add the potatoes to the pot (I think it might have gotten too crowded in the pot anyway). These flavors work so well together, this could easily be done in the crock pot as well, probably on low for 6 hours if your pressed for time in the evening.
We’re always on the lookout for a good sale, so it happened to be a pork loin this time, a pork tenderloin would work just a well. If this were a bone in pork roast I would probably set the timer for 60 minutes just to be sure it was fully cooked. You want the internal temperature to read 165 degrees.
