We had this for breakfast when we had out of town family staying with us, and just about every couple bites, they said “This is so good!” & “This is really good!”

It was a great way to start a busy day because we were going a couple hours away and would be eating out the rest the of the day.

This is so inexpensive to make, it was a big savings, and everyone had time to get ready while it was in the oven; so we could get out the door and not have to stop for breakfast as well.

Perfect for a holiday morning, or weekend brunch, it’s actually become a tradition for Christmas morning, just because it’s so easy to make. This fed 4 hearty eaters and we still had a big bowl of leftovers that heated up nicely in the microwave for a snack.

It’s so simple to whip up and toss in the fridge overnight, pull it out first thing in the morning and put in the oven. Or, make and bake after a few minutes for the bread to soak up the custard.

This time around we made a streusel topping, and drizzled warm maple syrup over the top, but sometimes a homemade blueberry syrup is good to top it off with so you can get that extra blueberry-y goodness!

We love blueberries because they have so many health benefits, and they taste good. Sometimes we make this Blueberry and Bacon French Toast in the skillet when there is just the two of us, and add a Blueberry Lemonade Bellini when we are in a festive mood!

Some tips:

  • You could swap the blueberries for diced peaches, or apples & cranberries.
  • Serve with breakfast sausage or bacon

Easy Blueberry French Toast Casserole with Streusel Topping

Perfect for a holiday morning or weekend brunch. This Easy Blueberry French Toast Casserole with Streusel Topping is a family favorite that is oh so easy to make.

Ingredients

  • 1 large loaf french bread, day-old challah or sourdough bread (cut into 1 1/2 inch cubes)
  • 8 large eggs
  • 2 and 1/4 cups whole milk
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 2 cups fresh or frozen blueberries

Streusel Topping:

  • 1/3 cup brown sugar
  • 1/3 cup flour
  • ½ tsp cinnamon
  • 6 tbsp unsalted butter, cold and cubed

Instructions

  1. Grease a 9 x 13 inch pan with butter or cooking spray.
  2. Cut the bread into cubes, about 1 1/2 inch in size.
  3. In a large bowl, whisk the eggs, add the milk, cinnamon, salt, sugar and vanilla.
  4. Add the bread cubes and mix until coated and add blueberries.
  5. Let stand 30 minutes or cover tightly with plastic wrap refrigerate up to overnight.
  6. Prepare the topping by whisking the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the cubed butter with a pastry blender or a fork.
  7. Sprinkle Streusel Topping just before baking
  8. Place an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
  9. Bake for 50-60 minutes or until golden brown on top. Let cool a few minutes before serving.
  10. Spoon onto serving plates and drizzle with maple syrup.
