The perfect fresh and flavorful appetizer. These Cucumber Tomato Appetizer Bites are filled with a zesty roasted red pepper hummus, making for a quick and easy dish when entertaining or just a healthy snack.
We made these Cucumber Tomato Appetizer Bites to take to my daughter’s, they were so popular people were taking pictures of them for Instagram.
I thought they would be hard to transport, but we just put them on a big cookie sheet, placed larger cucumber pieces on the corners and the middle, and covered them with plastic wrap. Then we placed them on top of the ice in the cooler. Since we were bringing beer too, that worked out great.
We had so many cucumbers we were giving them away, we pulled over 20 at one time from just one plant, and they’re all huge. There’s pictures at the bottom of the page.
That picture was taken before we trimmed the plant back. There were blossoms everywhere and it was trying to wrap itself around all of our other plants. So it was just getting out of control for our little garden space.
But they are so good homegrown, so crisp and juicy and full of flavor. I hope you find some good ones to try with this recipe!
I just bought roasted red pepper hummus, but if you have a favorite you could swap it out for that. When I tasted ours I thought it needed a bit more seasoning, it tasted kind of bland to start.
I added a few extra ingredients to kick it up a notch. So you might not need to add the extra seasonings.
We tried using a piping bag to get the hummus into the cucumbers, but it was a little to wet to cooperate. It still looked pretty just not perfectly uniform, maybe a little more cream cheese would have made it thicker, but we had to travel that day and didn’t really have a lot of extra time.
So everyone was happy with them and that’s what matters.

Cucumber Tomato Appetizer Bites
The perfect fresh and flavorful appetizer. These Cucumber Tomato Appetizer Bites are filled with a zesty roasted red pepper hummus, making for a quick and easy dish when entertaining or just a healthy snack.
Ingredients
- 2 large cucumbers
- 8 oz. Roasted Red Pepper Hummus
- 4 oz. Cream Cheese
- 1 Teaspoon Lemon juice
- 1/2 Teaspoon Garlic powder
- 1/4 Teaspoon Cayenne pepper
- 1/4 Teaspoon Lemon pepper
- 1/4 Teaspoon Sea Salt
- 1 Pint Grape or Cherry Tomatoes (sliced in halves)
Instructions
- Wash cucumbers and with a potato peeler remove part of the skin to make stripes all the way around.
- Slice cucumbers into about 1 inch slices. With a melon baller scoop out a little pocket in the center of each one.
- Mix all remaining ingredients (except tomatoes) well into the hummus and spoon dollops (or use piping bag) on to each cucumber and top with sliced tomato.
