Chili Lover’s Frito Pie

If your a Chili lover as much as we are, then you are familiar with a good Chili Frito Pie. The only problem is we don’t like our Frito’s getting all soft on the bottom. We prefer them to stay nice and crunchy. So if you reverse the method, problem solved!

Great for a quick game day treat or an easy weeknight dinner. The perfect follow up after you made a huge pot of chili. And who doesn't love themselves some chili?!


We make our Chili Lover’s Frito Pie with leftover chili, the day after making a nice big ole pot of our good old fashioned diner style Chili Lover’s ChiliIt’s so thick and rich and a little bit spicy, it might be even better on day two!

Now if your not in the mood to make a big pot of chili, you can certainly buy your favorite canned chili, I’ve done that before too.. a big 40 oz can of Chili Man Chili will work just fine.

This is also great for a quick game day treat or the upcoming Super Bowl. I’ve seen a lot of people like to set up a chili bar for Super Bowl parties. You could do that easily enough with a big pot of chili, keeping it warm in a crock pot, and set around several serving bowls of different toppings; things like jalapenos, onions, cheese, sour cream, green onions, extra hot sauce, etc.

Chili Lover’s Frito Pie

Yield: About 6 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 5 cups chili
  • 1 14 ounce size bag Fritos
  • 8 ounce Shredded Cheddar Cheese
  • 2 Jalapenos (sliced)

Instructions

  1. Preheat oven to 350 degrees.
  2. Warm up leftover chili on the stove top or microwave
  3. Pour warm chili in the bottom of a 2 quart baking dish, add cheeses and place Jalapenos around the center.
  4. Bake for 10 minutes, or until cheese is melted.
  5. Remove from oven and place Fritos around the sides on top of the chili
  6. Serve warm
