Seems like we want everything instant these days, why not try a fun twist on the classic Chicken Cordon Bleu dish, we love so much. Adding pasta is a good way to make a meal stretch to feed more mouths and done in the Instant Pot it makes a quick and easy weeknight meal that’s full of creamy cheesy goodness.

This was my first time trying pasta in the Instant Pot, or actually what I have is the Crock-Pot Express, which is basically the same thing, but I chose that one because it is non-stick pot and it’s about $30.00 cheaper. There’s an article from Consumer Reports comparing the two if your considering a purchase.

Now, I was a little hesitant to try pasta in it, because I’m pretty picky on the doneness of my pasta and I’m not going to lie, it did come out on the overcooked side. So if your worried about that you can make the pasta on the stove and drain it like normal, just add one cup of chicken broth instead of three to the Instant pot.

Then mix it all together to serve and top it off with that yummy Dijon Cream Sauce and Toasted Crumb topping, if you cutting out butter, you can toast in olive oil as well.

Now I didn’t jump on the bandwagon right away for these electric pressure cookers. I’ve been cooking without them for so many years I didn’t really care about having another new appliance to try to deal with, but I kept hearing how wonderful they are.

I finally broke down and said if we could get one on a good sale we’d try it out and I’m happy we did because it makes the most tender juicy meat ever.

This Pork Loin with a Sweet Balsamic Mushroom Sauce was the best, and my Instant Pot Beef Bourguignon just practically melts in your mouth it’s so tender. So I’m sure we’ll be coming up with lots more recipes to try, hope you follow along!

Chicken Cordon Bleu Instant Pot Casserole

Ingredients

  • 1-lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 1/2 cup cooked ham, diced
  • 16 oz small shell pasta (or your favorite)
  • 2 Tbsp olive oil
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon granulated onion
  • salt and pepper to taste
  • 3 cups low-sodium chicken broth
  • 1 cup shredded Swiss cheese
  • 1 green onion diced for garnish

Toasted Bread Crumb Topping:

  • 1 cup panko bread crumbs
  • 2 tablespoons butter (or olive oil)

Dijon Cream Sauce:

  • 2 tablespoons butter (or olive oil)
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 2 1/2 tablespoons Dijon mustard
  • 3 tbsp parmesan cheese, finely grated

Instructions

  1. Preheat Instant Pot on Sauté setting; add oil. Season chicken with salt, pepper, granulated garlic and onion; add to pot and stir to coat. Sauté chicken 1-2 minutes.
  2. Move the chicken to one side and add pasta, scoop the chicken over the top. Add the ham and cover with chicken broth. Place lid, lock and seal, and set to 10 minutes on high or poultry. When time is up allow 5 minutes then release the pressure. When you remove the lid, it might look a little wet at the bottom; just stir well and add the cheese. Set the lid over top of the pot to let melt for a minute or two.

Dijon Cream Sauce:

  1. Melt butter over medium heat in a small saucepan. Add flour and cook for 1 minute.
  2. Add half the milk and stir until smooth
  3. Add remaining milk, mustard and cheese. Turn down to simmer for 3 minutes, stirring constantly, until thickened.
  4. Remove from heat, add salt and pepper to taste.

Toasted Bread Crumb Topping:

  1. When timer is almost ready, melt 2 tablespoons butter in a skillet over medium heat. Add bread crumbs and toast, stirring often, until golden brown, about 5 minutes. Season with salt to taste.

Serving

  1. Remove chicken to serving dish. Top with Dijon Cream Sauce and toasted crumb topping and diced green onion for garnish

Can you do this without the pasta?

Yes, you could do it without any pasta. You will just have more liquid left in the pot, as none of it will be absorbed that way. If the excess liquid is a concern, you should be able to dial it back some, just to get the level you need so your Instant Pot does not get an error.
