Instant Pot Pork Loin with a Sweet Balsamic Mushroom Sauce

This Instant Pot Pork Loin with a Sweet Balsamic Mushroom Sauce is so full of flavor, tender and juicy it’s become one of our family favorites!

I like to add carrots and onions as well, but you don’t have to. We wanted mashed potatoes so I didn’t add the potatoes to the pot (I think it might have gotten too crowded in the pot anyway).

These flavors work so well together, this could easily be done in the crock pot as well, probably on low for 6 hours if your pressed for time in the evening.

We’re always on the lookout for a good sale, so it happened to be a pork loin this time, a pork tenderloin would work just a well.

If this were a bone in pork roast I would probably set the timer for 60 minutes just to be sure it was fully cooked. You want the internal temperature to read 165 degrees.

What can you serve with this Instant Pot Pork Loin with a Sweet Balsamic Mushroom Sauce?

  • Mashed potatoes are ALWAYS good with anything that has a gravy on it.
  • Some good French or Italian bread would be great to sop up any of the gravy that manages to be left on your plate.

Instant Pot Pork Loin with a Sweet Balsamic Mushroom Sauce

This Instant Pot Pork Loin with a Sweet Balsamic Mushroom Sauce is so full of flavor, tender and juicy it's become one of our family favorites!

Ingredients

  • 2 to 3 pounds boneless pork loin (trimmed of fat)
  • 2 tablespoons olive oil
  • 3 cloves garlic (diced)
  • 1 onion (sliced)
  • 4 carrots (cut large)
  • Salt and fresh cracked pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1 1/2 cup chicken broth or 1 1/2 cup water

Sweet Balsamic Mushroom Sauce:

  • 1 tablespoon butter
  • 1 cup sliced mushrooms
  • 1/2 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup balsamic vinegar
  • 1/2 water
  • 2 tablespoons soy sauce

Instructions

  1. Set Instant Pot to saute. When ready, add 2 teaspoons of olive oil to the bottom of the pot. Season with salt and pepper, oregano and thyme.  Place pork loin in pot and saute a couple minutes on all sides. Turn off saute.
  2. Add carrots, onions, garlic and pour in chicken broth or water. Secure the lid and cook on high pressure for 45 minutes. Let the pressure naturally release for 10 minutes before quickly releasing the rest of the pressure.

For the Sweet Balsamic Mushroom Sauce:

  1. While the pork loin is finishing up; in a saucepan, add a tablespoon of butter and brown the mushrooms a couple minutes. Whisk together all the ingredients for the sauce in the same saucepan, and bring the mixture to a boil. Reduce the heat, and simmer, stirring occasionally, until it thickens (2-3 minutes). Season to taste with a pinch of salt and pepper, if needed. Keep warm until ready to use.

Serving

  1. Remove the pork from the instant pot and place in a casserole dish, pull apart using 2 forks to shred. Pour the sauce when plated so you can freeze any leftover meat or use for sandwiches later.

This recipe is awesome! I did not need to cook the pork for 45 minutes - only did 21 in my instapot and it was perfect. So very tasty! Plenty for leftover sandwiches.
