Quick easy and full of flavor, that’s what I like for a busy weeknight dinner, and this Taco Spaghetti recipe comes together in under 30 minutes. This is a good no fuss, quick clean up dinner that leaves more time to relax harder, or to get caught up on laundry, which basically never happens.

Once in a blue moon, maybe; but I have a secret for for you, buy more socks and underwear, it’ll get you a few more days to get caught up on things like towels and sheets, right.

Trying to get in the mood for for some deep spring cleaning, but it seems like winter just doesn’t want to leave. I saw a commercial trying to act like the olden days saying, “We could binge watch the snow after dinner”.

Umm no, just no!

It did sound kinda funny though, but it’s not supposed to snow during spring baseball season. That’s just wrong. It’s like our seasons are shifting, we’ve been having warmer falls and colder springs.

So planting season may be set back. I hope not, I’m so ready to get my hands in the dirt, our zone is suppose to be ready to go this weekend.

This taco spaghetti is one of those recipes you can always throw together last minute. Sometimes I’ll have meals planned out ahead of time and something comes up or you forgot to pick up something you needed and just have to get something on the table without having to run to the store.

I always keep extra pasta and taco seasoning around. I buy a big container of taco seasoning at Costco, so 3 tablespoons of that equals one envelope of what you pick up at the store.

Actually, if your cutting down on carbs, you could substitute the pasta with zoodles. Or you could even use a spaghetti squash and ground turkey, or ground venison would work great for this as well.

I have used ground venison for chili and have used it for taco salads, so I’m sure it would be good in this too.

Another one of our favorite easy hamburger dinners is this Mac n Cheesy Cowboy Casserole, plus kids will love it too, it has all their favorite things in it.

Ingredients

  • 1 pound extra lean ground beef (or turkey)
  • 1 small onion (diced)
  • 1 package taco seasoning mix or (3 tablespoons)
  • 1 can (10 oz each) RoTel Diced Tomatoes & Green Chilies (undrained)
  • 8 ounces Spaghetti, uncooked
  • 3 tablespoons reduced fat sour cream
  • 1/2 cup shredded cheddar/jack cheese
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 green onions (diced)

Instructions

  1. Cook pasta according to package instructions, drain, cover and set aside.
  2. In a large skillet cook ground beef (breaking up into crumbles) add diced onion and cook over medium-high heat until no longer pink. Drain excess fat and return to skillet. Add taco seasoning and RoTel. Stir to combine. Simmer for 5 minutes.
  3. Stir in cooked spaghetti and top with shredded cheese and garnish with cilantro, green onions and sour cream.
