An absolutely divine gathering of fresh summer flavors come together in this Cuban Avocado & Citrus Salad with a Honey Lemon Dressing that’s just bursting with vibrant healthy flavors and ingredients that you may already have on hand or at least are easy to find.
We made this as a side dish to go with our Cuban Mojo Spatchcock Chicken recipe. It went perfectly with the juicy chicken and complimented all the flavors for a wonderfully enjoyable summer evening.
Well it’s not quite summer, but it feels like it around here. It’s my favorite time of year; the days are getting longer and there’s lots to do outside with the garden and all the flowers I’ve scattered about the yard.
I’m definitely wanting to spend more time outside and less time in the kitchen preparing food. So this comes together quick and would also be a great side to for just about anything your tossing on the grill.
Hopefully, Romaine lettuce is off the naughty list, since there was a terrible health scare with a multi-state recall on romaine we used Iceberg for this, however they are saying it is mostly likely safe or out of circulation now.
I would still wait till they are positive, before buying it again. Evidently there were lots of people freaking out or having romaine withdrawals over this, I don’t have a problem with switching to another lettuce, or just go with fresh baby greens it’s all good for you.

Cuban Avocado Citrus Salad with Honey Lemon Dressing
An absolutely divine gathering of fresh summer flavors come together in this Cuban Avocado & Citrus Salad with a Honey Lemon Dressing that's just bursting with vibrant healthy flavors.
Ingredients
- 1 - 2 avocados, sliced
- 1 head lettuce, chopped
- 2 cups mixed baby greens (spinach, swiss chard, arugula)
- 1 small red onion, sliced into half rings
- 1 orange, chopped (or pineapple)
Dressing:
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoons honey
- 1/4 teaspoon ground cumin
- 1/4 teaspoon granulated garlic
- Pinch salt
Instructions
For the salad:
- Add lettuce and baby mixed greens, top with red onion, the avocado slices and orange slices to a large plate or bowl.
For the dressing:
- Whisk together the olive oil, lemon juice, honey, cumin, garlic and salt in a small bowl. Pour some of the dressing over the salad and toss, adding more if desired. Reserve any extra dressing for later use.
