Cajun Marinated BBQ Chicken

Additional Time: 4 hours 10 minutes
Total Time: 4 hours 30 minutes

This Cajun Marinated BBQ Chicken recipe is an all-time favorite and the very definition of "winner winner chicken dinner"!

Ingredients

  • 2 lbs chicken (we did 3 legs and thighs)

Marinade:

  • 1/2 cup oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 1/2 tablespoon Cajun seasoning (I used Zatarains Cajun Creole)

Instructions

Grill Instructions:

  1. Put all marinade in a large zip top bag with chicken, and place in a bowl in your fridge for 4-8 hours.
  2. Get the grill ready to medium-high heat.
  3. You can use the rest of the marinade to brush on chicken as you turn it and add BBQ sauce the last few minutes. Cook until an internal temp of 165 degrees or the juices run clear. Let rest 5 -10 minutes
  4. Or if it's too cold for grilling or you don't have an outdoor grill...

Oven Instructions:

  1. Using a Pyrex or roasting pan, place the chicken in a 400 degree F oven brush or spoon with marinade or BBQ the last 10 minutes, cook until it reaches an internal temperature of 165 degrees F.

This is our go to grilled chicken recipe. Every time we make this, someone asks us for the recipe. We have found that marinading over night works best. If you over cook it don’t worry, a little char makes it even better! LOVE THIS RECIPE!!!
