We like stocking up on things when they’re on sale. So we had some smoked sausage that needed to used, as well as a half  bag shrimp in the freezer.

I thought if we picked up a ham steak we could use half for dinner and half for a country omelet. We were lucky enough to have a red bell pepper and tomato from the garden. Why not Jambalaya! It’s so good when it’s getting chilly outside, and it’s packed with protein, it’s actually pretty healthy. So this isn’t exactly authentic this time, we’ll go all out when it is Mardi Gras and get Andoule Sausage, make the Gumbo from scratch.. but for a quick and easy dinner it’s delish!

Jambalaya with Shrimp, Sausage & Ham

Here's a quick and easy dinner idea, it doesn't have to be Mardi Gras season to eat some good Creole Jambalaya and you can still pull it off if you don't have "everything" you need.

Ingredients

  • 2 Tablespoons olive oil
  • 2 cups water
  • 1 large tomato (diced) or can diced tomatoes
  • 1 can (15.5 oz) chili beans
  • 1 (8 oz) can tomato sauce
  • 1 pinch of sugar
  • 1/2 lb fully cooked smoked sausage, cut into slices
  • 1/2 to 3/4 lb medium fresh shrimp, peeled and deveined
  • 1/2 lb ham steak chopped in cube size
  • 1 cup long grain rice
  • 1 small onion (diced)
  • 1 bell pepper (your choice) I had a red bell pepper
  • 1 tablespoon Zatarains Creole Seasoning

Instructions

  1. For the rice: Bring water to a boil over medium-high heat. Add rice cover, reduce heat and let simmer for 20 minutes. (Don't forget to stir)
  2. Heat 2 tablespoons olive oil in a large saute pan over medium-high heat. Add onion,bell peppers and tomato. Saute for about 5 minutes, stirring occasionally, until the vegetables are soft and mostly cooked.
  3. Toss in sliced sausage and ham, add tomato sauce with a pinch of sugar, can chili beans with the sauce and let simmer about 10 minutes, then add your cleaned shrimp.. When shrimp curls and turns white it's done, serve over rice, or mix all together.. your choice
